Ventura was the first place in the world to grow and produce lima beans outside of their native region, Peru.
In the 1920s, a baker by the name of William Baker (legally changed from William Koch, which means "cook" in German) began working at a Ventura bakery. Finding his passion in baking, he later opened his own Bill Baker Bakery in Ojai, just north of Ventura. It was here that he perfected wheat-less flours. He combined lima beans, grown in Ventura, with soy products. Mr. Baker sold everything from bread to pastries with his innovative flour, and it was marketed as a health food far before the trend evolved to what it is today.
